Recently, National Public Radio’s Deb Amos reported from Syria’s exuberant food capital, Aleppo … just across the Turkish border.

The food of the Ottoman Empire transcended what are now the political boundaries of the Middle East, and this NPR report gives some hint of what a delectable legacy remains. The modern traveller in southeastern Turkey and Northern Syria will find that cooks in both countries share a taste for pomegranate molasses, red pepper, olive oil, and pistachios. Throughout these regions, we’ll be delighted to help you make your own discoveries– be they gastronomic or archeological.
