The food of the Ottoman Empire transcended what are now the political boundaries of the Middle East, and this NPR report gives some hint of what a delectable legacy remains. The modern traveller in southeastern Turkey and Northern Syria will find that cooks in both countries share a taste for pomegranate molasses, red pepper, olive oil, and pistachios.
